Valtellina apple puff pastry with acacia honey


Serves  4
400 g puff pastry
4 large Golden Delicious apples
2 eggs
brown sugar
cake gelatin
powdered cinnamon


Roll out the puff pastry and cut it into 10/12 cm rounds.  Peel and dice the apples, toss them in a pan with the butter and brown sugar, cinnamon and a teaspoon of acacia honey.  Create funnel shapes with the puff pastry and fill them with the previously prepared apples.  Brush the pastries with egg yolk and sprinkle with sugar.  Bake in the oven at 170°C for 18/20 minutes.  Once the pastries have been removed from the oven, arrange them on serving plates and garnish with honey and a scoop of vanilla ice cream.
